Ingredients

  • 4 eggs, separated
  • Pinch of salt
  • ¾ cup white sugar
  • 400 g fresh ricotta, sifted
  • 1/4 cup corn flour, sifted
  • 1 orange, squeezed and zested
  • 50 g dark chocolate, flaked
  • Icing sugar, to dust

Method

  1. Preheat oven to 200⁰C. Prepare a 20 cm springform pan/round baking dish by lining with parchment paper, leaving edges a little higher to ease the unmolding of the baked cake.
  2. Whip egg whites and salt until stiff peaks form and set aside.
  3. Use an electric mixer to whisk egg yolks and sugar together until creamy, then add sifted ricotta, corn starch, orange zest and 2 tbsp orange juice. Stir through chocolate flakes.
  4. Gently fold whipped egg whites into the ricotta mixture until evenly combined.
  5. Pour mixture into prepared baking dish and bake for 40 minutes. If the cake gets too dark too quickly, loosely cover with foil.
  6. Leave the cake to cool in the pan to make sure it sets properly. Dust with icing sugar when cooled and ready to serve.
  7. Serve with plain yoghurt and citrus zest.
