  • 1 cup cooked beetroot
  • 2 tins black beans, drained
  • ½ cup homemade cottage cheese
  • 1 tbsp tahini paste
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method

  1. Place all ingredients into a food processor, blend until smooth. If too thick, add some liquid from the tinned beans to thin it down. Optional: Garnish with extra black beans, crumbed feta, mint leaves, chopped cooked beetroot and pomegranate rubies.
