  • 1 cup granadilla pulp
  • ½ cup pineapple juice
  • 2 cups plain yoghurt
  • ½ tin coconut milk
  • 3 cups chopped pineapple
  • 200 g white chocolate, chopped
  • ½ cup coconut oil
  • 1 cup dedicated coconut

Method

  1. Mix together granadilla and pineapple juice.
  2. Blend together plain yoghurt, coconut milk and pineapple until smooth.
  3. Pour alternating layers of the granadilla and the coconut mixture into popsicle molds.
  4. Add sticks, then freeze until completely frozen.
  5. Melt together the chocolate and the coconut oil, then dip each lolly halfway, at a slant, into the chocolate, then straight into the coconut.
  6. Store in the freezer until ready to serve.
